Cartology is the name of Chris Alheit's poster wine - a unique, dazzling, firmly South African wine made mostly with Chenin Blanc from rare parcels of mature, low-yielding bush vine sites around the Western Cape. The fruit is carefully selected, hand-sorted and whole bunch pressed into a mix of concrete eggs, clay pots, foudres and old barrels to undergo wild fermentation. Some extended lees ageing gives the finished wine a medium rich mouthfeel that is just beautiful, filled with citrus oil, pear and honey. Truly one of our favorites.
