We don't always see unfortified wines coming from Sherry country, but this is beautiful, unique and absolutely delicious! Bodegas Barbadillo are one of the truly historic estates of Sanlúcar de Barrameda dating back to 1821. They produce an impressive array of sherries and still wines from an impressive 500 hectares of land. The 'Sábalo' bottling is a dry, still wine that hails from two Palomino Fino vineyards planted on pure chalk. The fruit is hand-harvested and lightly macerated before fermenting in stainless steel and resting four months on the lees. The end result is mature apples, almonds, minerality and a rich mouthfeel that comes off bone dry. Wonderful and adventurous!
