This is beautiful Cava from husband and wife team, Anna and Jordi Valles. The 48-acre Conquilla (Shell in Catalan) estate sits roughly 60km west of Barcelona on soils rich in limestone and marine fossils. Their sustainably farmed vineyards feature the local varieties Xarello, Macabeu and Parellada which are produced in the traditional method to make classic Cava. After the secondary fermentation this enjoys 12 months aging on the lees before disgorgement. For a no fuss, refreshing sparkler this is hard to beat. The finished product is a lean, clean, dry sparkling wine with bright acid, plenty of freshness and excellent mouthfeel.
