This is as classic as it gets - an even blend of the three Champagne varieties, Chardonnay, Pinot Noir and Pinot Meunier. The female run J. Lassalle hails from the village of Chigny-Les-Roses, using fruit from 16 different premier cru vineyards. They use organic methods in the vineyards and produce exceptional wines that are as good a value as you'll find in Champagne. The Cachet Or spends 36 months on the lees. The result is a pear, green apple and brioche filled Champagne that is racy and complex, while offering wonderful depth. For the money, it doesn't get better.
